Obviously ya’ll know I am a wife, a mom and a business owner and life is BUSY! I think we can all agree that life is sometimes too busy for our own good. I posted on my instagram the other day if you guys would love to see some killer (EASY!) recipes for you to make tonight!
A few prefaces… I am not a fantastic cook… I find super easy food recipes and make them… ALOT haha. Also, we love to eat glutten free and love to eat healthy BUT easy food sometimes isn’t the healthiest. Another thing, I literally never make “Betty Crocker” blog posts like this because usually a) I don’t have time and b) I don’t think people are interested in these silly blog posts, so if you love this PLEASE drop a comment and maybe share it? Is that a hard thing to ask? maybe too much 🙂
First I’m going to give a little bit of kitchen hacks that may help get the ball rolling at the beginning of the month that seriously helps so much come dinner time!

Chicken Enchiladas
So to preface, my husband loves beef, but I love chicken! Thankfully, when you make all your meat in advance you could technically do half and half, which is what we do most of the time! This is probably one of my FAVORITE meals, and my sister in law showed it to me, and its to die for! It is a little spicy, not too much, but if your kids don’t like spice I do recommend not doing the sauce for the kids portion.
What you will need:
So pretty simple, you start stuffing the Tortillas with chicken, beans, and cheese. This will be able to make around 6-8 enchiladas!
Then you pour the red sauce allllllll over the enchiladas! Then place aluminum foil over the pan and bake for 30 minutes. Take off the foil, top with cheese and cook another 10 minutes… and ENJOY!
I hope your family loves these as much as my family does! We usually make some Mexican rice from scratch too in our rice cooker! There are so many recipes but I love to do this if I have time 🙂
